Unloading meat and poultry at Smithfield Market. Red meat and poultry was unloaded and carried into Smithfield marketplace each morning. Butcher carriers such as Booth Brothers and Sons operated during the early hours. The meat was displayed, bought, and carried out again to waiting vans to be transported to the buyers. Sir Horace Jones designed the grand Victorian architecture housing Smithfield market in 1881.
