Full image caption

A Sugar mill. Engraving by J. Clark. Exterior scene of a sugar cane mill where black men and women are depicted carrying the canes to the mill. Two ovens for heating the raw cane prior to the crushing drums can be seen in the image on the right. The crushing mill is powered by an undershot water wheel. Feeding the grindstones was one of the most dangerous jobs on a plantation. A sharp machete was often hung close to the rollers in case it became necessary to sever a man's arm caught between the rollers.
